新鲜出炉的烧肉，食用前要彻底加热

烧肉是经典的广东风味美食之一，深受老广的喜爱。不过，近日香港抽检烧肉样本，声称发现其含有金黄葡萄球菌，并从中找出28种菌株，且有食物中毒元凶肠毒素的基因。此事引发广泛关注。羊城晚报记者了解到，目前广州未发现此类问题。营养建议，市民应在正规食肆购买新鲜出炉的烧肉，食用前要彻底加热。

香港抽检两成可能已带毒素

香港理工大学护理学院对烧肉样本做化验，发现25个样本有金黄葡萄球菌，并找出28种菌株，当中17.9%即5个菌株含肠毒素基因，另有一个菌株含可致伤口发炎的杀白血球素基因，3个菌株属抗药性。负责该项研究的理大护理学院研究员何浩文表示，金黄葡萄球菌通常存在于人类鼻孔、头发和皮肤，大部分菌株的基因来自人，“估计是烧味店员接触烧肉前，未有彻底洗手或清洁砧板等”。

室温悬挂时间愈长细菌愈多

由香港理工大学护理学院抽检50家香港烧味店的烧肉化验，发现半数有金黄葡萄球菌，并从中找出28种菌株，当中近两成带有食物中毒元凶肠毒素的基因，意味着这些烧肉可能已带毒素，因为部分细菌长时间存放在室温下会释出毒素，可令人呕吐。

香港食物安全中心指出，根据《即食食品微生物含量引路》，即食食品样本每克如含有或超过1万个金黄葡萄球菌，其微生物质素即不可接受。一般情况下，每克食物含有超过10万个金黄葡萄球菌，可产生足够的毒素引致食物中毒。

烧肉在粤港澳的美食排行中有极高地位，此次香港烧肉检出金黄葡萄球菌超标且含肠毒素基因，引起了市民的极大关注。

烧肉中的病毒基因到底从何而来?港大感染及传染病中心总监何栢良表示，烧味常经人手接触，处理者若有皮肤病或手有伤口，会增加烧肉带金黄葡萄球菌。

现实中，大多数烧味店常在室温环境下挂起烧肉待售，这样做会强化菌种滋生。两至三成金黄葡萄球菌含肠毒素基因，未必引致食物中毒，但烧肉经高温烹调，待售时降至室温，可能令肠毒素释放，则易引发食物中毒，烧肉放在室温的时间愈长，细菌愈多，“人一般进食1至6小时后，可导致呕吐、腹泻、胃痉挛等”。

支招食用前要彻底加热

从广州市有关部门了解到，目前广州市面上的烧肉合格率比较高，暂未发现香港所述的该类病菌个案。据悉，金黄葡萄球菌是常见的化脓性球菌之一，经常是化脓性炎症的人或带菌者接触食品后使食品污染，所以食品生产线上是不允许手受伤感染的操作工直接接触食品的。

上海市食品学会食品安全专业委员会主任马志英表示，防止金黄葡萄球菌污染食品，主要依靠食品生产制作全过程的严格控制，除了生产加工人员要控制污染外，还要注意在低温和通风合格的环境下贮藏食物，以防肠毒素形成。“食用前要彻底加热。”马志英说，食品被金黄葡菌球菌污染后，外观正常，感官性状没有变化，容易被忽视，春、夏、秋季特别要注意，加热是对付此菌的“撒手锏”，一般对易污染的肉制品要煮熟烧透，确保杀死该菌。
